Valentine’s Day is the perfect time to get creative in the kitchen, and these heart-shaped vanilla shortbread biscuits are a simple yet charming bake. Buttery, crumbly and delicately sweet, they’re ideal for sharing, gifting, or adding a romantic touch to your celebrations.
Finished with a generous layer of Stokes Strawberry Extra Jam, these biscuits bring a fruity, indulgent twist to a classic recipe, perfect for homemade Valentine’s treats that are easy to make and sure to impress.
Making time: 1 Hour 50 mins
Serves: 8-12 People
Ingredients:
- 500g Plain flour
- 250g Unsalted butter, softened
- 200g Caster sugar
- 1tsp Vanilla extract
· Option finishing touches:
- Dark or milk chocolate (for Dipping)
- Pink or red sprinkles
- Stokes Strawberry Extra Jam to spread on the biscuits
Method:
- Beat the butter and caster sugar together until pale and smooth. Mix in the vanilla extract
- Gradually add the flour and mix until a soft dough forms. Do not overwork
- Wrap and chill the dough for 30 minutes to firm up
- Roll out to around 1cm thickness. Cut into heart shapes
- Place on lined trays and bake at 170°C (fan 150°C) for 15–18 minutes, until just lightly golden at the edges
- Cool fully and apply a generous spoonful of Stokes Strawberry Extra Jam to the biscuits. You can also try dipping half of the biscuit in melted chocolate or decorate with sprinkles if desired
