What temperatures can the rayon twine withstand?
Our rayon butcher’s twine is fully roastable and can withstand temperatures of over 220°C, making it suitable for tying meat, poultry and roasting joints before cooking. Its heat resistance and strength make it a practical choice for professional butchers, caterers and home cooks.
Can I freeze natural casings?
No - we do not recommend that you freeze the casings. It can affect their quality and mean they tear easier once defrosted.
How should natural casings be stored?
Any casings that are left over should be flushed with water and then re-salted. After this has been done please store casings in an airtight container and they will last in the fridge for up to a year providing they're still within their expiry.
Tapes Casings vs Bundles
Taped casings are pre-salted casings that are spun on flat tapes for easier application onto the stuffing nozzle.
There are many benefits of taped casings:
- Reduces the likelihood of damaging casings as they are much easier to apply onto filling nozzles
- Quick to load onto filling nozzles
- Removes the need to unravel and untangle individual ends of large casing bundles
- Prevents knotting of casings
- Easy to soak
Salted casing bundles are casings in their most basic form. Just like taped casings, they are pre-cleaned and salted.
The difference is that they come minus the flat tapes and need to be thoroughly rinsed of salt both inside and outside before use. They also need to be carefully un-tied to avoid tangles.
Is Hog the most natural casing?
Hog and sheep are the most natural casings that we stock. The collagen casings are animal based, but the not the actual intestines themselves.
There is a strong smell coming from my casings, is this normal?
A strong odour when opening a packet or caddy of casings is completely normal. Gas can build up inside the packaging and when released it can sometimes be unpleasant. Once flushed through and re-salted the smell should dissipate.
My natural casings won't slide over the nozzle, can anything be done?
Try and re-soak the casings in ice cold water. If the water is too warm it may not separate them properly, which in turn will make it difficult to slide them onto the machine. If you are still experiencing difficulties, please just contact us.
What is the origin of the natural casings?
All our sheep and hog casings are sourced from the EU. We have product specifications available if they are required.
Do the collagen casings need to be soaked before use?
No, with the collagen casings you can use them straight from the pack.
Are the collagen casings suitable for hot and cold smoking?
Yes, they are.
How should collagen casings be stored?
Collagen casings must be stored in a dark, cool and dry place, between 5-18 degree, out of sunlight and no extreme temperatures. Once opened, any unused sticks need to be sealed as tightly as possible and placed under the same conditions as above.
Specification sheets can be provided upon request.
