Chicken Sausage Mix (568g)

This Chicken Sausage Mix is great as an alternative to pork or beef sausages and can be used with chicken or turkey. Chicken sausages are becoming more and more popular and this mix is ideal for tasty yet simple chicken sausages. 

Features:

• 567g per sachet
• Pre-mix of seasoning and rusk
• 12.5% usage rate
• For every 567g of mix, 10lbs of sausage is produced

Instructions:

Mixer or by Hand

• Mince the meat and place in mixer
• Add sausage mix and mix well, to evenly distribute
• Gradually add water and mix in until absorbed
• Re-mince through a 5mm or 8mm plate to achieve the desired texture
• Note: Mincing the meat through a coarser plate will result in a coarser textured sausage. Temperature after processing should not exceed 5^o

Bowl Chopper

• Roughly dice the meat and place in the bowl cutter
• On slow speed, sprinkle on sausage mix and chop until dispersed
• Gradually add half the water (iced cold water) and chop until absorbed. (This step can be carried out on a high speed to obtain a finer textured sausage if desired)
• On slow speed, add the balance of the water and chop until desired texture is obtained

Ingredients: Rusk (Wheat flour, Salt), Salt, Flavourings, Maltodextrin, Stabiliser (E451(i)), Soya Protein Concentrate, Dextrose, Yeast Extract, Sugar, Sunflower Oil, Preservative (E223), Antioxidant (E300), Anticaking Agent (E551).
