Serves: 4 people
Ingredients:
- 600g Skinless chicken thighs or breasts, diced
- 1 Tub (475g) Madras Curry Sauce from The Curry Sauce Co.
- 1 Medium onion, finely sliced
- 1tbsp Vegetable oil
- 100ml of Potts Chicken Stock In A Can (optional, and used to adjust sauce consistency)
- Fresh coriander, to garnish
- Steamed rice or naan, to serve
Method:
- In a pan, add in 1tbsp of vegetable oil over medium heat. Add the sliced onion and cook until soft and translucent (around 5 minutes)
- Increase the heat to medium-high and add the diced chicken and cook until lightly browned all over (about 5-7 minutes)
- Pour in the Madras Curry Sauce straight from the tub. Stir well to coat the chicken and onions with the sauce
- Bring to a gentle simmer, then reduce the heat to medium-low. Cover the pan for 20 minutes to simmer and stir occasionally.
- If you want a thinner consistency, stir in up to 100ml of chicken stock
- Once the chicken is tender and cooked through, garnish the curry with chopped fresh coriander
- Serve hot with steamed rice or warm naan for a full, satisfying meal
