Ingredients:
- 400g Diced pork
- 330g Potts Fajita and Taco Cooking Sauce in a Can
- 8 Soft tortillas
- 1 Fresh jalapeño, thinly sliced
- 30g Fresh coriander (roughly a handful), chopped
- 1 Fresh lime, cut into wedges
- 4tbsp Sour cream
- 2 Medium tomatoes, chopped
- 100g Guacamole
- 80g Shredded cheese
Method:
Oven Method
- Preheat your oven to 150 °C
- Place the diced pork in a casserole dish. Pour in the 330g of Potts Fajita and Taco Cooking Sauce in a Can
- Bake for 1½ to 2 hours, or until the pork is fork‑tender and pulls apart easily
- Remove from oven, shred the pork inside the dish to soak up the sauce
- Warm tortillas and serve the pork with toppings such as jalapeño, coriander, lime, sour cream, tomatoes, guacamole, and shredded cheese
Slow cooker method
- Transfer the diced pork and the Potts Fajita and Taco Cooking Sauce in a Can into the slow cooker
- Cook on low for 8-10 hours, or until the meat easily shreds
- Shred the pork, stir to combine with the sauce, and keep warm until serving
- Serve in warmed tortillas with chosen toppings
