Chicken or Halloumi Skewers: Recipe

Looking for an easy, crowd-pleasing BBQ treat that is suitable for both meat lovers and vegetarians? You've come to the right place. These Chicken/Halloumi skewers are bursting with flavour, quick to prepare, and made with ingredients you can grab from Butcher-Sundries.

Making Time: 55 minutes

Serves: 4 people

Ingredients:

  • 500g Boneless chicken thighs or breast, cut into chunks
  • Or 250g Halloumi cheese cut into cubes
  • 1 tbsp of Middletons Cajun Glaze
  • 1 tbsp Olive oil or vegetable oil
  • 1 Red pepper, deseeded and chopped
  • 1 Courgette, sliced
  • 1 Small red onion, quartered
  • 6-8 Teppo Gushi 180mm Skewers

Method:

  • In a bowl, mix the Middletons Cajun Glaze with 1 tbsp of either oil
  • Add the chicken/halloumi pieces into the bowl and toss to coat evenly
  • Optional, add the chopped vegetables for extra flavour and colour
  • Cover and leave in the fridge for at least 15 minutes to 1 hour
  • Next, thread the marinated chicken/halloumi onto the bamboo skewers, alternating the chicken/halloumi with red pepper, courgette, and onion
  • Preheat the grill to medium-high. Cook each skewer for 7-10 minutes, turning occasionally, until the chicken is fully cooked (no pink remains) and the halloumi is golden
  • For oven options, preheat the oven to 200°C (180°C fan) / 400°F / Gas Mark 6. Place skewers on a lined tray and bake for 15-20 minutes, turning halfway through
