This recipe takes things up a notch with the spicy-sweet kick of Stokes Chilli Jam, paired with rich Italian salami and crisp toasted sourdough. Serves: 4 people
Ingredients:
- 1 sourdough baguette or small loaf, sliced into 1 cm-thick pieces
- 2tbsp Extra virgin olive oil
- 2 Garlic cloves, peeled
- 100g Italian salami, thinly sliced
- 3tbsp Stokes Chilli Jam
- Fresh basil leaves for garnish
- Cornish Sea Salt and freshly ground black pepper to taste
Method:
- Preheat your grill or toaster oven on medium to high temperature. Brush both sides of each bread slice with olive oil. Toast for 1-2 minutes per side until golden and crisp
- Whilst the bread is still warm, gently rub the cut side of a garlic clove over one side of each slice. This infuses the toast with a subtle garlic aroma without overpowering the dish
- Spread about 1 teaspoon of Stokes Chilli Jam onto each slice of Bruschetta
- Fold or layer 1-2 slices of Italian Salami over each bruschetta. Choose your favourite variety. Peppery salami will work well with the chilli jam
- Finish with a sprinkling of salt and black pepper, and top with fresh basil leaves for a pop of colour and aroma. Serve immediately whilst the bread is still warm and crisp
