This recipe will walk you through how to create the perfect Christmas feast, from a beautifully roasted turkey to golden roast potatoes, flavour-packed vegetables, homemade gravy, and festive desserts.

Serves: 8 People
Perfect Roast Turkey
Ingredients:
- 1 Whole turkey (4–6 kg depending on guests)
- 200g Softened butter
- 2 Onions, halved
- 1 Lemon, halved
- 1 Whole garlic, halved
- Fresh rosemary and thyme
- Cornish Sea Salt & Co. and pepper
- MRC Garlic & Butter Glaze
- Optional: streaky bacon for the top
Method:
- Preheat your oven to 180°C (fan 160°C/gas mark 4)
- Pat the turkey dry with kitchen paper
- Rub the entire turkey with softened butter, including under the skin if possible
- Season generously with salt and pepper
- Stuff the cavity with onions, garlic, lemon, and herbs
- Place the turkey in a roasting tray and cover loosely with foil
- Roast for calculated time (generally 20 minutes per kg + 90 minutes)
- During the final 30 minutes, brush a thin layer of your chosen MRC Garlic & Butter Glaze over the turkey, for a festive shine and caramelised flavour
- For extra flavour, remove the foil for the final 45 minutes to crisp the skin
- Allow the turkey to rest for at least 30–45 minutes before carving
Crispy Roast Potatoes
Ingredients:
- 1.5kg Potatoes
- Vegetable oil
- Cooks Choice “Roasties” Coating
- Optional: rosemary & garlic
Methods:
- Peel and chop potatoes into even chunks
- Boil for 10 minutes
- Drain and shake the potatoes
- In a bowl, drizzle oil over the potatoes and toss. Add rosemary and garlic to the potatoes
- Sprinkle generously with Cooks Choice Roasties Coating for enhanced crispiness and savoury flavour
- Roast for 1 hour, turning halfway
Honey-Glazed Carrots & Parsnips
Ingredients:
- 500g Carrots
- 500g Parsnips
- 2tbsp Honey
- 2tbsp Olive oil
- Cornish Sea Salt & Co. and pepper
Methods:
- Peel and slice vegetables lengthways
- Coat with honey, oil, or seasoning
- Roast at 200°C for 35–40 minutes
Rich Christmas Gravy
Ingredients:
- Turkey roasting juices
- Potts Turkey Madeira and Sage Gravy or Lamb & Port Gravy
Method:
- Place the leftover juices from the turkey on one side
- From the choice of Potts gravies, open the packet and pour into the pan on the cooker
- On low heat, allow the gravy to simmer and add the turkey juices to the gravy
- Simmer for 10-15 minutes and set aside
Classic Stuffing
Ingredients:
- 1 Onion, finely chopped
- 2 Garlic cloves, crushed
- 200g Sausage meat
- 1 Egg
- Fresh sage, chopped
- Cornish Sea Salt & Co and pepper
- 150g Parsley, Thyme & Lemon Stuffing Mix
Method:
- Preheat your oven to 180 °C (fan 160 °C/gas mark 4)
- In a large bowl, combine the chopped onion, crushed garlic, sausage meat, the egg, chopped sage, salt and pepper
- Add the 150g stuffing mix and stir thoroughly to combine everything
- Shape the mixture into stuffing balls or place into a lightly oiled baking dish
- Bake in the preheated oven for approximately 25–30 minutes, or until the top is golden and the centre is cooked through
- Serve alongside your roast turkey and all the trimmings
