Mexican Chilli Sausage Mix
Our Lucas Mexican Chilli Sausage Mix is a free-flowing combination of seasoning and rusk, with chilli and spice notes, as well as visual red and green pepper pieces to create a delicious sausage mix.

Instructions:
Mixer
- Mince the meat and place in a mixer
- Add sausage mix and mix well to evenly distribute
- Gradually add water and mix in until fully absorbed
- Re-mince through a 5 or 8mm plate to achieve your desired texture
- Note: Mincing the meat through a coarser plate will result in a coarser textured sausage. Temperature after processing should not exceed 5oc.
Bowl Chopper
- Dice the meat and put into the bowl cutter
- On a slow speed, sprinkle on sausage mix and chop until it has dispersed
- Gradually add half of the iced cold water and chop until absorbed (if you’re looking to create a finer textured sausage, you can complete this step on a high speed)
- On a slow speed, add the remainder of the water. Chop until the desired texture has been achieved
