Cheddar and Caramelised Onion Pastries

Serves 4-6

  • 100g Mature Cheddar
  • 500g Puff Pastry
  • Sun-dried Tomatoes
  • Black Pepper
  • The Bay Tree Sticky Caramelised Onions


  1. Preheat the oven to 220C. Lightly flour your surface and roll out the puff pastry
  2. Take a circular cutter and cut small circles out of the pastry. Lift each individual circle onto a lightly greased baking tray
  3. Sprinkle the centre of each pastry with the cheese, then top with the Sticky Caramelised Onions (make sure to leave a 1-inch gap to the edge of the pastry)
  4. Add the sun-dried tomatoes, or any alternative toppings (mushrooms, spinach etc)
  5. Season each pastry with black pepper
  6. Place the pastries in the oven and cook for 20-25 minutes or until the pastry is golden brown
