Ingredients:
- 100g Mature Cheddar
- 500g Puff Pastry
- Sun-dried Tomatoes
- Black Pepper
- The Bay Tree Sticky Caramelised Onions
- Preheat the oven to 220C. Lightly flour your surface and roll out the puff pastry
- Take a circular cutter and cut small circles out of the pastry. Lift each individual circle onto a lightly greased baking tray
- Sprinkle the centre of each pastry with the cheese, then top with the Sticky Caramelised Onions (make sure to leave a 1-inch gap to the edge of the pastry)
- Add the sun-dried tomatoes, or any alternative toppings (mushrooms, spinach etc)
- Season each pastry with black pepper
- Place the pastries in the oven and cook for 20-25 minutes or until the pastry is golden brown
