Chilli Jam, Bacon, and Brie Pastie: Recipe

They’re quick to make, irresistibly delicious, and perfect for picnics, lunches, or cosy nights in. Whether you're impressing guests or just treating yourself, this recipe turns everyday ingredients into something seriously special.

Making Time: 40 minutes

Serves: Makes 6 pasties (ideal for 3-6 people/1-2 pasties per person)

Ingredients:

  • 1 Sheet of ready-rolled puff pastry
  • 6tsp Stokes Chilli Jam
  • 6 Rashers of streaky bacon, cooked and chopped
  • 150g Brie, sliced
  • 1 Egg, beaten for egg wash
  • Optional: Fresh thyme or cracked black pepper for garnish

Method:

  • Preheat the oven to 200°C (180°C fan) / 400°F / Gas 6
  • Cook the bacon until crisp and drain on kitchen paper, and then chop it into bite-sized pieces
  • Roll out the pastry and cut it into 6 equal rectangles (or any shape you prefer)
  • On one half of each piece of pastry, spread one 1tsp of Stokes Chilli Jam and then add some chopped bacon and 2-3 slices of Brie
  • Then fold the pastry over to encase the filling and press the edges with a fork to seal
  • Brush the tops of the pastry with a beaten egg. As an optional extra, you can also sprinkle thyme or black pepper
  • Bake for 20-25 minutes, until golden brown and puffed

Serving Suggestions:

  • The pasties are perfect warm or cold for lunchboxes, picnics, or a light dinner with some side salad
  • Try pairing it with extra Stokes Chilli Jam on the side for dipping
