Welcome back to the third instalment of Shop & Chop, the blog series where bold flavour meets simplicity using just a handful of ingredients from Butchers‑Sundries. This week, we’re diving headfirst into a bowl of our Creamy Tomato & Herb Sausage Pasta, a comfort-food winner made with minimal fuss. It’s hearty, rich, and ready in under 30 minutes, perfect for busy weeknights when you want something homemade but don’t want the hassle.

Ingredients

Sun-Dried Tomato & Basil Sausage Mix – 567g

Infuses your dish with sweet, sun-dried tomatoes and fresh basil—a natural match for creamy pasta.

Pork & Herb Sausage Mix – 568g

Delivers classic sage and cracked pepper notes to elevate the savoury depth.

Garlic & Herb Sausage Mix – 567g

Brings prominent garlic and herb flavours, essential for a rich, aromatic sauce.

Additional ingredients:

  • Any desired Sausage Casings from Butchers-Sundries
  • 500g of Minced pork
  • 400g Pasta (penne or rigatoni)
  • 200ml Double cream
  • 1tbsp Olive oil
  • 1 Small onion, finely chopped
  • 2 Cloves garlic, minced
  • 100ml Passata or crushed tomatoes
  • Fresh basil or parsley, for garnish (optional)
  • Grated parmesan (optional)

Preparation Steps

  • Soak natural sausage casings overnight in cold water, then rinse and prepare per pack instructions
  • Boil the pasta until cooked through, drain, and set aside
  • In a bowl, mix 500g of minced pork, 1tbsp each of Sun-Dried Tomato & Basil, Pork & Herb, and Garlic & Herb Mixes, then stir thoroughly
  • Stuff the sausages using a sausage stuffer (available through Butchers-Sundries), thread the casing onto the nozzle, then feed the sausage mix into the casing, twisting into 8-10cm lengths
  • Heat the oil in a pan over medium-high heat, break the sausage mixture into pieces, and add the sausage to the pan and cook for at least five minutes until lightly browned
  • In the same pan, add chopped onion and garlic, cook for two minutes until softened. Add the passata and cream into the pan and stir well. Let it simmer for five minutes until slightly thickened
  • Finally, add pasta to the sauce until it's coated. Serve the finished meal in bowls and garnish with fresh herbs and parmesan, if desired

  • Add a splash of white wine or a pinch of chilli flakes for extra depth
  • Use half-fat cream and Greek yoghurt for a lighter version
  • Save leftovers for an easy lunch, just reheat the pasta and sauce separately
