Hot Cross Buns: Recipe

Making Time: 3-4 hours

 

Serves: 12

 

Ingredients:

For the buns:

  • 500g Strong white bread flour
  • 75g Caster sugar
  • 2 tsp Mixed spice
  • 1 tsp Ground cinnamon
  • 10g Cornish Sea salt
  • 10g Fast-action yeast
  • 300ml Warm milk
  • 50g Unsalted butter, melted
  • 1 Large egg
  • 200g Mixed dried fruit (sultanas, currants, chopped peel)

For the cross:

  • 75g Plain flour
  • 5 tbsp Water

For the glaze:

  • 2 tbsp Jam from the selection made by Stokes

Method

  1. Mix the dough: In a large bowl, combine the flour, sugar, mixed spice, cinnamon, and salt. Then, add the yeast on one side of the bowl and the salt on the other
  2. Add the wet ingredients: Pour in the warm milk, melted butter, and egg then mix everything until a soft dough forms
  3. Knead the dough: Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. If using a stand mixer, knead for about 5 minutes on medium speed
  4. First rise: Place the dough in a lightly greased bowl, cover with a clean tea towel, and leave to rise in a warm place for 1-2 hours or until doubled in size
  5. Add the fruit: Once risen, tip the dough onto a lightly floured surface, flatten it slightly, and knead in the mixed dried fruit until evenly distributed
  6. Shape the buns: Divide the dough into 12 equal pieces, roll them into balls, and place them onto a baking tray lined with parchment paper, leaving a little space between each one. Cover loosely and leave to prove for another 45 minutes to 1 hour, until puffy
  7. Make the cross: Mix the plain flour with water to form a thick paste, transfer it into a piping bag, and pipe a cross over each bun
  8. Bake: Preheat your oven to 200°C (180°C fan, Gas Mark 6) and bake the buns for 15-20 minutes until golden brown and cooked through
  9. Glaze: While the buns are still warm, gently heat your chosen jam from Stokes until it becomes runny, then brush it over the tops for a glossy finish
  10. Cool & enjoy: Let the buns cool on a wire rack before serving and enjoy warm with butter

Serving suggestion:

Cut the Hot Cross Buns in half and spread your favourite Stokes Extra Jam into each slice.
