Ingredients:
- 200g Rolled oats
- 150g Plain flour
- 100g Light brown sugar
- ½ tsp Baking powder
- ½ tsp Cornish Sea Salt
- 150g Unsalted butter, melted
- 1 tsp Vanilla extract
- 200g Stokes Raspberry Jam
- 50g Chopped nuts (optional, such as almonds or walnuts)
Method:
- Preheat the oven to 180°C (160°C fan) / Gas Mark 4. Line a 20cm (8-inch) square baking tin with baking parchment
- In a large bowl, mix together oats, flour, sugar, baking powder, and salt
- Stir in the melted butter and vanilla extract until the mixture becomes crumbly
- Press two-thirds of the mixture firmly into the base of the tin
- Spread the Stokes Raspberry Jam evenly over the base, leaving a small gap around the edges
- Sprinkle over the remaining oat mixture and the chopped nuts (if using). Lightly press down
- Bake for 25–30 minutes, or until golden brown on top
- Leave to cool completely in the tin before cutting into bars

Perfect with a cuppa or served warm with a scoop of vanilla ice cream!
