Raspberry Jam Oat Bars: Recipe

Serves: 12

Ingredients:

  • 200g Rolled oats
  • 150g Plain flour
  • 100g Light brown sugar
  • ½ tsp Baking powder
  • ½ tsp Cornish Sea Salt
  • 150g Unsalted butter, melted
  • 1 tsp Vanilla extract
  • 200g Stokes Raspberry Jam
  • 50g Chopped nuts (optional, such as almonds or walnuts)

Method:

  1. Preheat the oven to 180°C (160°C fan) / Gas Mark 4. Line a 20cm (8-inch) square baking tin with baking parchment
  2. In a large bowl, mix together oats, flour, sugar, baking powder, and salt
  3. Stir in the melted butter and vanilla extract until the mixture becomes crumbly
  4. Press two-thirds of the mixture firmly into the base of the tin
  5. Spread the Stokes Raspberry Jam evenly over the base, leaving a small gap around the edges
  6. Sprinkle over the remaining oat mixture and the chopped nuts (if using). Lightly press down
  7. Bake for 25–30 minutes, or until golden brown on top
  8. Leave to cool completely in the tin before cutting into bars

Serving Suggestion:

Perfect with a cuppa or served warm with a scoop of vanilla ice cream!
