A highly sought-after product by experienced butchers, this Lucas Burger Mix creates a mouth-watering burger especially when paired with beef or game. This is a pink-tinted coloured mix that has tasty notes of savoury, spice, and onion.

• For every 340g of mix, 10lb of burger is produced

Instructions:

Using a Mixer:

• Mince meat and place in mixer
• Add burger mix and mix well, to evenly distribute
• Gradually add water and mix in until absorbed
• Re-mince through a 5mm or 8mm plate to achieve the desired texture
• Note: Mincing the meat through a coarser plate will result in a coarser textured product. Temperature after processing should not exceed 5˚C

Using a Bowl Chopper:

• Roughly dice the meat and place in a bowl chopper
• On a slow speed, sprinkle in the burger mix and chop until dispersed
• Gradually add half the iced cold water and chop until absorbed. You would carry out this step on a higher speed if a finer textured burger was desired
• On a slow speed, add the balance of the water and chop until desired texture is obtained

Forming: Form into burgers of your required size and weight on a suitable machine.

Ingredients: Rusk [Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin), Salt, Raising Agent (E503)], Salt, Onion Powder, Stabiliser (E451), Flavourings, Preservative (E221), Spices, Hydrolysed Vegetable Protein, Antioxidant (E300), Colour (E120).
