Butchers Classic Cumberland Sausage Mix 

Our Lucas Butchers Classic Cumberland Sausage Mix is a free-flowing combination of seasoning and bread rusk, with pepper and savoury notes, as well as visual rubbed herbs to create a delicious sausage mix. 

Features: 

• 11.25% usage rate  
• A complete mix of rusk & seasoning 
• 510g per sachet 
• Suitable for vegetarians and vegans 

Instructions: 

Mixer 

• Mince the meat and place in a mixer  
• Add sausage mix and mix well to evenly distribute 
• Gradually add water and mix in until fully absorbed 
• Re-mince through a 5 or 8mm plate to achieve your desired texture  
• Note: Mincing the meat through a coarser plate will result in a coarser textured sausage. Temperature after processing should not exceed 5oc. 

Bowl Chopper 

• Dice the meat and put into the bowl cutter  
• On a slow speed, sprinkle on sausage mix and chop until it has dispersed  
• Gradually add half of the iced cold water and chop until absorbed (if you’re looking to create a finer textured sausage, you can complete this step on a high speed)  
• On a slow speed, add the remainder of the water. Chop until the desired texture has been achieved
