Butchers Classic Lamb & Mint Sausage Mix 

Our Lucas Butchers Classic Lamb & Mint Sausage Mix is a free-flowing combination of seasoning and bread rusk, with mint and savoury notes, as well as visual rubbed mint and parsley to create a delicious sausage mix. 

Features: 

• 12.5% usage rate 
• A complete mix of rusk & seasoning 
• 567g per sachet 

Instructions: 

Mixer 

• Mince the meat and place in a mixer  
• Add sausage mix and mix well to evenly distribute 
• Gradually add water and mix in until fully absorbed 
• Re-mince through a 5 or 8mm plate to achieve your desired texture  
• Note: Mincing the meat through a coarser plate will result in a coarser textured sausage. Temperature after processing should not exceed 5oc. 

Bowl Chopper 

• Dice the meat and put into the bowl cutter  
• On a slow speed, sprinkle on sausage mix and chop until it has dispersed  
• Gradually add half of the iced cold water and chop until absorbed (if you’re looking to create a finer textured sausage, you can complete this step on a high speed)  
• On a slow speed, add the remainder of the water. Chop until the desired texture has been achieved  

Ingredients: Breadcrumb [Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin), Salt, Yeast)] (70-80%), Salt (10-20%), Dextrose (2-5%), Flavouring (2-5%), Sunflower Oil (2-5%), Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin) (<2%), Stabiliser (E451) (<2%), Herbs (Mint, Rosemary) (<2%), Preservative (E221) (<2%), Spice (Black Pepper) (<2%), Garlic Powder (<2%), Antioxidant (E300) (<2%)
