Butchers Classic Pork Sausage Mix
Our Lucas Butchers Classic Pork Sausage Mix is a free-flowing combination of seasoning and bread rusk, with spice and savoury notes to create a delicious sausage mix.
Features:
- 12.5% usage rate (maximum)
- A complete mix of rusk & seasoning
- 567g per sachet
- Suitable for vegetarians and vegans
Instructions:
Mixer
- Mince the meat and place in a mixer
- Add sausage mix and mix well to evenly distribute
- Gradually add water and mix in until fully absorbed
- Re-mince through a 5 or 8mm plate to achieve your desired texture
- Note: Mincing the meat through a coarser plate will result in a coarser textured sausage. Temperature after processing should not exceed 5oc.
Bowl Chopper
- Dice the meat and put into the bowl cutter
- On a slow speed, sprinkle on sausage mix and chop until it has dispersed
- Gradually add half of the iced cold water and chop until absorbed (if you’re looking to create a finer textured sausage, you can complete this step on a high speed)
- On a slow speed, add the remainder of the water. Chop until the desired texture has been achieved
Ingredients: Breadcrumb [Wheat flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin), Salt, Yeast] (70-80%), Salt (5-10%), Spices (White Pepper, Nutmeg, Ginger, Red Chilli Pepper), (2-5%), Yeast Extract (2-5%), Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin) (2-5%), Onion Powder (2-5%), Sugar (2-5%), Stabiliser (E451) (<2%), Herbs (<2%) , Sunflower Oil (<2%), Preservative (E223) (<2%), Antioxidant (E300) (<2%)
