Lucas Gold Tint Pork Sausage Seasoning
Our Lucas Gold Tint Pork Sausage Seasoning is a favourite and known by many traditional butchers. This is a medium-strength pork sausage seasoning, with peppery notes and a hint of ginger.
Features:
- Available in 227g sachets or 15kg tubs
- Each sachet of 227g will make approximately 20lbs of sausage
Instructions:
Mixer
- Mince the meat and place in mixing bowl
- Add seasoning and mix well, to evenly distribute
- Add rusk and mix evenly to distribute
- Gradually add water (iced cold water) and mix
- Remince through a 5mm or 8mm plate to achieve desired texture
- Note: Mincing the meat through a coarser plate will result in a coarser textured sausage. Various sizes of rusk are available to control the final texture of the product. Temperature after processing should not exceed 5˚c.
Bowl Chopper
- Roughly dice the meat and place in bowl cutter
- On slow speed, sprinkle on seasoning and chop until dispersed
- Gradually add half the water (iced cold water) and chop until absorbed. (The step can be carried out on a high speed, to obtain a finer textured sausage if desired
- On slow speed add the rusk and the balance of the water
- Chop until the desired texture is obtained.
Ingredients: Salt, Rusk (Wheat Flour, Salt), Stabiliser (E451(i), Wheat Flour, Preservative (E221), Spices, Dextrose, Antioxidant (E300), Spice Extracts, Colour (E120), Flavouring.
Allergens: Gluten (Flavouring, Rusk (Wheat Flour, Salt), Wheat Flour), Celery (Flavouring), Sulphites (E220 Carry Over (Dextrose, Preservative E221)
