Gold Lincolnshire Pork Plain Seasoning (227g)
This Gold Lincolnshire Pork Seasoning has a prominent sage flavour with high levels of cayenne and pepper. You can fill your meat into our natural hog casings and link as desired.
Features:

- For every 227g of seasoning, 20lbs of meat will be produced
- 2.5% maximum usage rate
- Suitable for vegetarians and vegans
Instructions:
Mixer
- Mince the meat and place in a mixing bowl
- Add the seasoning and mix well
- Add the rusk and re-mix
- Gradually add the iced cold water and mix again
- Re-mince through a 5 or 8mm plate to achieve your desired texture
Bowl Chopper
- Dice the meat and put into the bowl cutter
- On a slow speed, sprinkle the seasoning and chop until it has dispersed
- Gradually add half of the iced cold water and chop until absorbed (if you’re looking to create a finer textured sausage, you can complete this step on a high speed)
- On a slow speed add the rusk and the remainder of the water. Chop until the desired texture has been achieved
- Note: Mincing the meat through a coarser plate will result in a coarser textured sausage. Temperature after processing should not exceed 5o You can use different sizes of rusk to control the final texture of the product.
Ingredients: Salt (50-60%), Rusk [Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin), Salt, Raising Agent (E503)] (10-20%), Stabiliser (E451) (5-10%), Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin) (5-10%), Herb (Sage) (2-5%), Preservative (E221) (2-5%), Flavourings (2-5%), Spice (White Pepper) (2-5%), Dextrose (2-5%), Sunflower Oil (<2%), Antioxidant (E300).
Allergens: Gluten (Wheat Flour, Rusk (Wheat Flour)), Sulphites (Preservative (E221))
