Ingredients:
- 750g Frozen skin-on fries (or hand-cut potatoes)
- 2 tbsp Vegetable oil
- 1 tsp Cornish Sea Salt
- ½ tsp Smoked paprika (optional)
- 2 Chicken breasts, diced or 225g halloumi cheese (veggie option)
- 1 tbsp Vegetable oil
- 2 tbsp MRC Piri Piri Glaze
- 1 tbsp Water
- 100g Grated cheddar cheese
- 50g Grated mozzarella cheese
- 1 Red onion, finely sliced
- 1 Red chilli, finely sliced (optional)
- 1 Spring onion, chopped
- Fresh coriander, chopped (optional)
- 2 tbsp Stokes Real Mayonnaise
- 1 tbsp Sriracha (or more MRC Piri Piri Glaze mixed with mayo for extra spice)
- ½ Lime, for squeezing
Method:
- Preheat the oven to 200°C (180°C fan/gas mark 6)
- Toss the frozen fries with vegetable oil, salt, and smoked paprika (if using)
- Next, spread the fries evenly on a baking tray and cook for 20-25 minutes, turning halfway, until golden and crispy
- In a bowl, mix the diced chicken or chunks of halloumi with MRC Piri Piri Glaze and 1 tbsp water. Let it marinate for 5 minutes
- Heat 1 tbsp oil in a pan over medium heat, add the marinated chicken/halloumi, and cook for 6-8 minutes, stirring occasionally, until cooked through and slightly caramelised
- Once the fries are crispy, transfer them to an ovenproof dish and sprinkle over the cheddar and mozzarella cheese before returning to the oven for a few minutes to allow the cheese to melt
- Top with the cooked Piri Piri chicken, red onion, red chilli, and spring onion
- Mix the mayonnaise and sriracha together and drizzle over the loaded fries
- Sprinkle with fresh coriander and finish with a squeeze of lime juice
- Serve immediately and enjoy your spicy Piri Piri Loaded Fries!
