BBQ Cajun Chicken & Grilled Corn Tacos with Lime Crema: Recipe

A fresh, flavour-packed BBQ recipe that’s perfect for summer menus. Juicy Cajun-spiced chicken paired with smoky grilled corn and a zesty lime crema, ideal for butchers looking to offer something different from the usual burgers and sausages.

 

Making time: 1 hour

Serves: 4 people

Ingredients: 

  • 4 Chicken breasts/thighs
  • 2tbsp MRC Cajun Seasoning
  • 1tbsp Olive oil
  • Juice of 2 ½ Limes
  • 2 Corn
  • ½ Red Onion, finely chopped
  • 1 Small bunch Coriander, chopped
  • Salt and pepper
  • 4tbsp Sour cream
  • 1tsp Garlic paste

Method: 

  • Coat the chicken with olive oil, Cajun seasoning, and lime juice. Leave to marinate for at least 30 minutes
  • Place corn directly on the BBQ and cook until lightly charred on all sides. Slice the kernels off and mix with onion, coriander, lime juice, salt, and pepper
  • Grill over medium heat for 10–15 minutes, turning occasionally, until cooked through with a slight char. Rest, then slice into strips
  • Mix sour cream, lime juice, and garlic paste until smooth
  • Warm tortillas, add sliced chicken, top with corn salsa, drizzle with lime crema, and finish with optional toppings
