A fresh, flavour-packed BBQ recipe that’s perfect for summer menus. Juicy Cajun-spiced chicken paired with smoky grilled corn and a zesty lime crema, ideal for butchers looking to offer something different from the usual burgers and sausages.

Serves: 4 people
Ingredients:
- 4 Chicken breasts/thighs
- 2tbsp MRC Cajun Seasoning
- 1tbsp Olive oil
- Juice of 2 ½ Limes
- 2 Corn
- ½ Red Onion, finely chopped
- 1 Small bunch Coriander, chopped
- Salt and pepper
- 4tbsp Sour cream
- 1tsp Garlic paste
Method:
- Coat the chicken with olive oil, Cajun seasoning, and lime juice. Leave to marinate for at least 30 minutes
- Place corn directly on the BBQ and cook until lightly charred on all sides. Slice the kernels off and mix with onion, coriander, lime juice, salt, and pepper
- Grill over medium heat for 10–15 minutes, turning occasionally, until cooked through with a slight char. Rest, then slice into strips
- Mix sour cream, lime juice, and garlic paste until smooth
- Warm tortillas, add sliced chicken, top with corn salsa, drizzle with lime crema, and finish with optional toppings
